Zucchini and Bell Pepper Enchiladas
{with some plain old black beans on the side}
Don't you just LOVE an easy recipe when you find one? Better yet when dinner is served, you find your husband & kids wanting 2nd's AND happily accepting it for lunch leftover's the next day!!! Well, I found one of those recipes the other day while perusing through some blogs! I want to give credit where credit is due so I'll let you find the recipe over here which also saves me the time of typing it out!! Hop on over there, you'll enjoy it.....both the blog and recipe!! The chopped up avocado's really make it ALL the better. REALLY! AND to make it easier I just opened a can of black beans, warmed them up, and piled them next to the enchilada's.
